This recipe has been adapted from a few variations of chilli con carne (obviously mine is vegan), until I found the perfect combination of ingredients.
Ingredients:
- Olive oil for frying ( around 3 tbsp )
- 2 red onions, finely chopped
- 4 garlic cloves, finely chopped
- 2 spring onions, finely chopped
- 1tbsp sweet paprika
- 6 plum tomatoes, chopped as small as you can
- 1 red pepper, cut length ways ( fry separately and set aside )
- 4 vegan burgers, or sausages, or vegan mince ( chopped up )
- Salt to taste
- 2 Tbsp tomato paste
- 1tsp xylitol sugar
- 1 cup water
- 1 tsp coriander seeds
- ½ tsp cumin seeds
- ½ tsp caraway seeds
- 1 tin cannelloni beans
- 4 tbsp red wine
- 3 tbs balsamic vinegar
- 1 tsp dried chilli flakes
Method:
In a deep, non stick pan, heat olive oil and fry onions until soft.
Add the garlic and the burgers, lower the heat and cook further for about 3 minutes
Sprinkle with paprika.
Add all the other herbs, stir for a minute or two and spoon in the tomato paste and chopped tomatoes, cover and allow to cook for a few minutes.
Now add the sugar, and the water, season to taste, add red pepper and enjoy!
