Carrot, Beetroot, Apple & Ginger Juice



This deliciously sweet juice is vitamin packed and is easily absorbed. It has been called the Miracle Drink.


The recipe:

  • 1 Medium Beetroot
  • 2 Medium Carrots
  • 1 Apple
  • 3cm knob of gingerroot
  • 2 Spinach leaves or 2 baby Pak Choi or 3 broccoli heads with stems or one stem celery with leaves. (I sometimes do a combination of greens.)

I use the Oscar Juicer which is a masticating juicer and is a super product for high quality juicing.




For best results, store produce in fridge for a chilled drink. Drink on an empty stomach if possible.

Put the pulp in your compost heap or re-use by making:

Juice Pulp Crackers

  • 2 Cups pulp
  • 1/2 Cup flaxseed meal (linseed grounded)
  • 1 Cup water or as needed
  • Spices like coriander, turmeric and vegan tamari (1 tbsp)
  • 3 tbsp nutritional yeast
  • Mix all together in a food processor.
  • Spread thinly onto an oven sheet (with non-stick spray) and cut into squares.
  • Bake at 150oC for an hour.
